The most produced mushroom species. Recently the demand is growing for the brown species as well. Generally produced for immediate consumption or conservation. Crucial part of healthy nutrition. Contains low calories, fat and carbohydrates, while having significant mineral (N, P, K, Mg), vitamin and high fibre content. Rich taste and flavour components. Its protein content is valuable due to its favourable amino acid content.

Nowadays this mushroom species is gaining more and more popularity among consumers due to its powerful and intense taste and easy and comfortable production. Relatively cheap and can be served in many ways.
Along its relatively low mineral content it has remarkable potassium, magnesium and phosphor content, while having favourable amount of trace elements such as Zink, Aluminium, Boron and Copper. In addition it contains Selenium considered to be important these days. Regarding its vitamin content, the B-vitamin group has the greatest significance; 100g of oyster mushroom provide the 20% of an adult’s daily portion.
Its medical effect has been proved many times by animal tests. In today’s Chinese medicine its powder is used for strengthening the vascular system and treating rigid limbs and limb cramps. Reduces the cholesterol level of blood and its extract was efficient against certain tumours in mice as well. Mushroom dosed for a longer a period of time activates the immune system. Extracts of some oyster mushroom species have an antibiotic effect as well.

Even the ancient Chinese considered this mushroom species as the elixir of eternal life that increases vitality and stops aging. Nowadays it can be the potential medicine for diabetes. High blood pressure, high blood-sugar level and high cholesterol level meeting insulin resistance can cause so-called metabolic syndrome. This disease is the forerunner of type 2 diabetes. Former animal and human tests point to the fact that this mushroom species may alternately treat the abovementioned diseases. The plate-sized, normally uneatable mushroom contains approximately 200 active components, notably the various polysaccharides are considered to be the most efficient ones by scientists. One of the greatest values of this mushroom is that it strengthens the immune system and lowers allergic complaints. It is used to ease, or even eliminate, the side effects of radiation treatments applied in oncotherapy and chemotherapy treatments as well. Tastes lightly bitter, usually consumed as a tea. Scald a teaspoon of the dried and chopped mushroom and boil it for 5 minutes then leave it for 30 minutes. Serve it hot and filtered

People barely know that this flashy and easily determinable mushroom is one of the most outstanding edible mushrooms. Named after the solution process inside the mushroom cap that takes place by the aging of fruiting body when an ink-like black fluid emerges due to the mature spores.
Remarkable research findings were born regarding the curative effective of ink cap mushroom. Chinese scientists observed significant or even 100% inhibition of certain malignant tumours in animals treated with ink-cap mushroom extracts. On the other hand its blood-sugar lowering effect was identical to antidiabetic drugs used in medical practise. In order to achieve the favourable effect, diabetes patients have to consume 10-20g of indulgently dried and powdered mushroom a day, mixed in any cold food.
